When is comes to finding a healthy, vegan treat, however, it can be pretty damn hard. This chocolate banana bread really hits the spot without containing anything too nasty. Its rich dark chocolate flavour together with the chewy, yummy texture that only the best banana bread can give makes it a real winner!
I like to spread a big blob of peanut butter on my slices and eat it for breakfast with a lovely cup of tea, but it works great as a snack too! I’ve worked it out to be around 142 cals per slice but don’t quote me on that.
Vegan Chocolate Banana Bread
Prep time: 15 mins
Cook time: 40 mins + time to cool
Yield: 15 slices
250g mashed banana (about 2 1/2 bananas)
2 1/2 tsp vanilla essence
1 tbsp white wine vinegar
60ml soy milk/almond milk/any kind of milk
100g maple syrup
1/8 tsp sweetener (I used truvia)
1 tsp baking soda
Pinch of baking powder
Pinch of salt
55g cocoa powder
This recipe is just so easy it feels so awkward writing it down!
Start by preheating the oven to 180 and greasing a pretty average sized loaf pan.
Mix all of the wet ingredients (before the ‘-‘) in a bowl until relatively smooth.
Mix all of the dry ingredients together in another bowl.
Pour dry into wet and beat until smooth. Pour this mixture into your greased tin and place in the oven.
Cook for around 40 mins, before turning off the oven and leaving the bread to cool a little in the oven.
After around 10 mins or so remove the bread and place on a wire rack to cool!
